Vickiís Favorite Recipe - Cranberry Chicken
- 1 can whole cranberry sauce
- 8 oz. Creamy French dressing
- 1 pkg. onion soup mix
- 4-6 chicken breasts
Mix ingredients together, pour over chicken placed in a 13x9 pan. Cover with foil and bake in 350 oven for 45 minutes. Uncover and bake 30 more minutes. Serve with/over hot rice.
Vickiís Transport Tips
I always use my Pampered Chef woven serving tray, with handles on either side and raised edges, to hold dishes in position. The other option is to use my Pyrex zip-up bag, even if I don't use the Pyrex pan that it came with, it holds everything in place well, has handles and keeps things warm.
Vickiís Favorite Meal Sheís Received
My favorite tasting meal: Turkey Kielbasa Corn Chowder with a delicious salad covered in sugar-coated-almonds, cranberries and a homemade vinegar dressing.
My most memorable meal: I can't remember what the food was, but it was presented with such care! A card special-made for me with the menu listed on it in lovely font and a beautiful border. The food was "gourmet" in my mind, a meat with 2 veggies and bread and salad and dessert. The care and love that went into the preparation obviously stuck in my mind more than the food! But that was more important to me anyway.
My most appreciated meal: The idea to give me a "week of lunches" really blessed me because it so practically met my needs at the time!!! I truly enjoyed the days more as a result.
Vickiís Meal Disaster
Disasters? I tend to forget disasters as a coping mechanism. If the meal I prepare doesn't work out, I just buy a WalMart rotisserie chicken, some salad, and bread and don't admit to the disaster! It feels as if it never happened.
